By the 1920s, it was understood that scurvy was prevented by the effect of a compound which was therefore named ascorbic acid ( from the Latin name for scurvy) or vitamin C. However, the scientific composition of this substance was not understood. Albert Szent-Györgyi identified a subtance which he labelled "hexuronic acid", which he suspected to be ascorbic acid. In 1932 that Szent-Györgyi was able to extract 500 mg of this compound from paprika ( thus being able to manufacture in large quantities what had previously only been available in tiny amounts).
